Portland Restaurant West Cafe Chef’s Table: Sean’s Weekly Fresh Sheet

West Cafe Chef Sean Concannon offers up his preparation recommendations for the freshest, regional ingredients in this weekly update. West Cafe offers weekly and daily specials for lunch and dinner in a delightful, downtown Portland location. Located at 1201 SW Jefferson, the cafe is nestled in Portland’s cultural district, just blocks away from the Portland Art Museum, The Schnitzer Concert Hall and Lincoln High School.

This week from the Chef’s Table:

True Cod and Red Rock Fish look like healthy choices to order this week, keeping New Year’s Resolutions intact.

True Cod is a lean white fish (fished from the Pacific Ocean qualifies the “true”) lending itself to many preparations, though my favorite is pan-seared with a tamarind mango mustard drizzle. The flavors are bright and cheery chasing the winter cold away.

Red Rock Fish has a slightly sweet, flakey flavor & texture. Served stuffed with a shrimp mousse or Dungeness crab filling, this dish would sate even our new president’s palate.

So swing by any night this week except Sunday and treat yourself to any of our “Simply Inspired” dishes.
